If you are anything like me, Sunday evenings are your time to kick back and relax. A glass of wine and the best true crime documentary on Netflix are the first things that come to mind. I do not understand but there is something about True Crime documentaries that has gotten me addicted to them, as it has you. Stories of the most notorious killers, ongoing cases, closed cases with stories that turn into rabbit holes, true crime is one of the most interesting genres of television.

The only explanation for this morbid interest could be that each of these cases gives birth to our natural curiosity to investigate. And while we cannot go out and do the actual investigation, we have documentaries to do them for us. Here is our list of the top ten true crime documentaries on the internet right now.

Killer Inside: The Mind of Aaron Hernandez.

The latest in Netflix’s series of true crime documentaries, Killer Inside delves into the mind of a very recent murder. Why has it attained the level of popularity you ask? The murder was committed by star footballer Aaron Hernandez, who played for The Patriots. The show not only explored the murders he committed, but the essentiality of who the monster was. Aaron Hernandez was portrayed as a man with deep underlying issues, and his dilibidating mental health due to the sport he played. The show is intriguing, and a humanitarian take on the life of a serial killer. At the end of the show you still don’t forgive him for the murders, but come to feel empathy for Hernandez, and maybe that was intended. (3/5)

Tiger King.

One of the most bizarre true crime documentaries I have seen in recent times, Tiger King is one to sit through. The program showcases one of the most epic rivalries between the biggest cat owners in the United States. The cats themselves are massive: being lions and tigers. Instead of tackling the animal cruelty the animal face however, the show focuses on the rivalry between the handlers. The show explores more of the murder charges leveled against one of them instead of the elephant in the room. Which is animal abuse. Animal abuse is obviously a crime in itself and I believe a better series would have been born if the show focused only on that. (2.5/5)

Don’t F*** With Cats: Hunting An Internet Killer

Less bizarre and sadder, Don’t F With Cats is a truly horrifying hunt for a psychotic killer over the labyrinth of the internet. Concise and kept short, the show actually does a good job in terms of storytelling and cinematography. There is, of course, a little less of the details in their entirety, and more speculation. The one thing that irks me the most is how we, the viewers at the end are ‘responsible’. The creators ask us if we consider ourselves complicit to the crime because of watching it. (3/5)

The true mark of a good documentary is not just in portraying unbiased facts. It also lies in portraying these facts in such a way that you truly feel the disgust seep into your own bones. If the name isn’t familiar to you already, Jeffery Epstein was a prolific sex offender and paedophile. He was in 2005 and later 2019, arrested and convicted for sexual acts with minors. He is infamous for having an entire ‘sex island’ on Miami where he keeps and trafficks minors to perform sexual favours on influential and wealthy personalities across the world. The documentary is a video feature of the news article in the Miami Herald that covered and exposed his crimes. Triggering and disgusting, we would urge you to watch the documentary at your own risk. All in all it is a pretty thorough investigation and analysis and deserves all the accolades. (3.5/5)

Most stories and documentaries are exposes on a criminal. Longshot is anything but that. Longshot is the story of an innocent man and his alibi. Convicted for a crime he did not commit, Juan Catalan has mere days before he is executed. When asked for his alibi, he claims that he was at a baseball game, but how can he prove his defence to a jury? The documentary goes above and beyond the usual; it makes you anticipate and excite yourself into the culmination of it. (4/5)

Natasha Kampusch – The Whole Story

I vividly recall a recent Oscar-winning movie, Room, having a story quite similar to this real-life horror. Poor Natasha Kampusch, then 11 years old, taken from her home and kept in captivity for eight years. When she finally escaped, the media circus around her case was massive. She agreed to do this documentary in lieu of getting to tell her story in her own words. The story is touching and horrifying, and you get to see life from somebody else’s lens of the world.

Not really a documentary, Casting Jon Benet truly focuses on the story that others saw, not what actually happened. The story of Jon-Benet is already infamous, but nobody ever really speaks of the connection everybody else had with it. The documentary sees this connection, of how the story of JonBenet’s death brings out people’s own stories. It sees how they explain parts of what they believe in based on their own lives.

The story is more of a study on the people that audition for the documentary and by extension the general public which embroiled into the media circus. From the point of acquiring information, the documentary is a solid no to watch. But to truly understand the psychology of the people around a murder, and what it is about it that attracts people, there is no better true crime documentary than Casting Jon Benet. (2/5, from the point of view of portraying a purely technical documentary.)

This true crime documentary will feel to you as if its right off a Hollywood movie! The imposter is actually based on real-life events, no matter how hard the events try to convince you otherwise. The story is a young boy, Nicholas Barclay from Texas who goes missing for three years. The family is afraid that they’ve lost him forever, but he returns! The only problem is, the family doesn’t know it is actually Nicholas. And that’s how the story begins! In terms of storytelling, the documentary does a wonderful job sticking to the facts. But we also appreciate the sensationalism thrown in. (3.5/5)

Trial By Media

This documentary explores the effects the media presence had upon many murder cases across the country. The jury usually has no prior knowledge of cases before sitting for them. But with cases like these, how would it be possible? And how did the court handle these mishaps? The documentary in itself is a very interesting watch. Rajma Pulao

This is a delicious dish made from Rajma, herbs, spices and rice. It is a substitute for Rajma Chawal which is made in one pot. You can eat Rajma Pulao with raita, curd, fry or curry.

Ingredients –

  1. Rajma (Kidney beans) – Half cup
  2. Basmati rice – 1 cup
  3. Water – 4 cups
  4. Salt – According to taste
  5. Bay leaf – 1 or 2
  6. Cinnamon – some pieces
  7. Cloves – Few
  8. Cardamom – Few
  9. Cumin seeds – 1 teaspoon
  10. Chilli – 1
  11. Ginger – 1 inch
  12. Garlic – Few cloves
  13. Onion – 1
  14. Oil – 3 tablespoons
  15. Lemon juice – 1 teaspoon
  16. Coriander leaves – 1 tablespoon
  17. Turmeric powder – Half teaspoon
  18. Chilli powder – Half teaspoon
  19. Coriander powder – Half teaspoon

Method –

  1. Soak Rajma on the previous night of cooking Rajma Pulao. Rinse the Rajma before soaking in water.
  2. On the next day, discard the water and rinse rajma again. In a pressure cooker, put Rajma and add 2 cups of water.
  3. Pressure cook till the Rajma becomes soft. The number of whistles depends on the quality of Rajma. Some Rajma gets cooked fast, while some take time.
  4. Separate Rajma from the water and keep it aside. Rinse the Basmati rice finely with water. Then soak the rice in water for half an hour.
  5. Chop the chilli, ginger, garlic and onion finely.
  6. Heat a pressure cooker and add oil, cumin seeds, bay leaf, cinnamon, cardamom and cloves. Let them crackle.
  7. Then add chilli, ginger, garlic and onion. Fry till the raw smell disappears.
  8. Put Rajma to it. Then add salt, turmeric powder, chilli powder and coriander powder. Mix very well.
  9. Add basmati rice, 2 cups water, coriander leaves and lemon juice to it. Stir it well. Cover and pressure cook the pulao on a medium to high flame for 1 or 2 whistles.
  10. Open the lid when the pressure comes down. Serve it hot.

Shahi Biryani

This is an appetizing rice dish. It is made from rice, vegetables, herbs and spices. You can eat Shahi Biryani with raita, curd, fry or curry.

  1. Basmati rice – 2 cups
  2. Water – 4 cups
  3. Salt – According to taste
  4. Everest Shahi Biryani masala – 1 small packet
  5. Vegetables – 2 cups
  6. Oil – 3 tablespoons
  7. Curd – 1 cup
  8. Bay leaf – 1 or 2
  9. Cinnamon – some pieces
  10. Cloves – Few
  11. Cardamom – Few
  12. Cumin seeds – 1 teaspoon
  13. Chilli – 1
  14. Ginger – 1 inch
  15. Garlic – Few cloves
  16. Onion – 1
  17. Coriander leaves – 1 tablespoon
  18. Peppercorn – Few
  19. Tomato – 1

Method –

  1. You can put any vegetables of your choice. I had put carrot, beans and cabbage. Chop the vegetables finely.
  2. I had used the entire Rs. 10 packet of Everest Shahi Biryani masala. You can use any Biryani masala that you want.
  3. Rinse the Basmati rice finely with water. Then soak the rice in water for half an hour.
  4. Mix the masala powder with curd and keep it aside. Chop the tomato, chilli, ginger, garlic and onion finely.
  5. Heat a pressure cooker and add oil, cumin seeds, bay leaf, cinnamon, peppercorn, cardamom and cloves. Let them crackle.
  6. Then add chilli, ginger, garlic and onion. Fry till the raw smell disappears. Add the chopped vegetables to it. Fry well but do not overcook.
  7. Put tomato and sauté till it turns mushy. Add the mixture of masala powder and curd. Mix well and ensure that curd does not burn.
  8. Add rice, salt, water and coriander leaves to it. Stir very well. Cover and pressure cook the biryani on a medium to high flame for 1 or 2 whistles.
  9. Open the lid when the pressure comes down. Serve it hot.

Masala Rice

This rice dish is a healthy combination of vegetables and rice. It is tasty and wholesome meal. You can eat Masala Rice with raita, curd, fry or curry.

  3. Heat a pan and put oil to it. Add cumin seeds, mustard seeds and Asafoetida. Let them splutter.
  4. Add peanuts and roast for few minutes. Then add chilli, onion and tomato. Put turmeric powder and chilli powder to it. Mix very well.
  5. Then add all the vegetables and put salt. Fry well but do not overcook. Sautee the vegetables for few minutes.
  6. Add cooked rice to this. Mix well and cook for some time. Then add lemon juice and coriander leaves to it.
  7. Mix them very well. Serve it hot.

How to make your own homemade granola?

Now that you know what all needs to go in your granola, let us make a batch ourselves. You can of course, play around with the proportions, to make it exactly the way you like!

Ingredients to make your own homemade granola

  1. 2 cups rolled oats
  2. ¾ cups of nuts and/or seeds, as per preference
  3. A pinch of salt
  4. ½ teaspoon mixed spices, as per preference
  5. ¼ cup melted coconut or extra-virgin olive oil
  6. ¼ cup honey or maple syrup
  7. 5 ml of vanilla extract
  8. 1/3 cup dried fruits
  9. ¼ cup mix-ins that you might want to add, totally optional

Method:

Preheat oven to 180 C and line a baking tray with parchment paper.

In a large bowl, mix together the oats, nuts, seeds, salt and spices.

Add in the oil, honey/maple syrup and vanilla. Mix well so that the oats and nuts are lightly coated with the liquids.

Pour this mixture over your prepared tin, and spread in an even layer.

Bake this for about 20-25 minutes, till the granola is light golden in color. Halfway through the baking, stir the mixture once.

When the granola cools down, it will crisp up further.

Do not disturb the mixture, and let it cool down for at least 45 minutes. Top it up with dried fruits and mix-ins that you want to use. Break it with your hands if you want big chunks. Else, just stir the mix with a spoon to break it down into small pieces.

Storing your granola

Homemade granola stores beautifully. If you intend to finish it off in a week or two, you can store it in an airtight container for 2 weeks easily. Else, you can transfer the mix to a sealed bag, and then freeze it for around 3 months. However, the mix will freeze solid. Thus, let it thaw and come to room temperature for around 10-15 minutes before serving.

Sections Of The Examination (iBT & PBT)

The TOEFL exam has four sections – reading, listening, speaking, and writing. The maximum score allotted to each section is 30, which brings us to the overall score of 120. One great thing to know about the TOEFL exam, there are no passing or failing scores. The TOEFL exam comes in two forms – the internet-based examination (iBT) and the other is the paper-based examination (PBT).

Let’s look into the internet-based examination pattern first.

Reading & Listening

The first section is the reading section. It will take approximately 62 to 80 minutes to assess and analyze the written text. The topics allotted to the reading section of the TOEFL exam are mostly from science and academic discussion. The reading section has 3 to 4 passages of 700 words on academic and scientific topics.

A person’s understanding of rhetorical functions is assessed. The ability to understand argumentation, compare and contrast, cause-effect within a span of 62 to 80 minutes will be checked.

The second section is the listening section. The time allotted in this section is usually 60 to 90 minutes. Assessment parameters look into a person’s oral abilities. A set of questions follow after each lecture. Usually, 4 to 6 lectures with their respective questions frame a section. Not only your understanding of the oral version, but the motivation and emotion of the speaker are important for the assessment. This helps to understand if you are physically and mentally stable to comprehend a person’s linguistics. Questions also contain parts of the student conversation. So you may have 6 academic lectures or 2 student conversations or academic lectures and a discussion. Assessment is in the form of organization of information, understanding of ideas, and comprehensive details all under a span of 90 minutes.

Speaking And Writing

The third section is the speaking section. The shortest time frame of 20 minutes along with a set of 6 questions comes in this section. You are allowed to take a microphone during the test and speak out your thought process. In addition to that your idea, way of speaking, understanding, and expression also a part of the analysis The spontaneity with which you come up with ideas, form them into sentences convey your thoughts clearly and coherently is a key determiner. It will help you get through this section once you practice speaking without fear.

The last section we have is the writing section. 50 minutes allotted and all you have to do is to demonstrate how well you can write in English. Your entire set of knowledge on grammar, vocabulary, and sentence formation will come into play here. Two different parts constitute the writing section. It has questions related to integrated writing and independent writing. As an examinee, you have to be clear while you state your opinions and explanations. One single day completes all of the above sections. Total hours allotted include 4 and 1/2 hours.

A short break is usually provided between the listening and speaking sections.

Paper-Based TOEFL Exam (PBT)

Now the paper-based examination is similar to the internet-based exam. With four different sections, listening, structure and written expression, reading comprehension, and writing. The listening section comprises of 30 to 40 minutes, structure and written expression of 25 minutes. The reading comprehension consists of a good 55 minutes and writing has 30 minutes to complete the entire paper.

You can use rough sheets to make notes. You can make scratch notes, and separate pointers while you submit the PBT TOEFL Test. Submit all the rough papers and notes that you use. You are also allowed to eat during the exam. However, only during the break. If required, you can visit the washroom However, all of it comes under the entire time allotted for the TOEFL exam. You cannot carry any electronic devices such as mobile phones, laptop, or tablets. Not even during the official break. Once your examination is over you can get back to the devices.

Score System

Out of the total 120 points, any score above 50% is good but for top ranking schools. It’s best if you concentrate on 75% and above for studying or getting a decent job in the US. Top colleges that include Columbia and Cornell universities require 100% or above for admission.

TOEFL exam

The paper-based test score ranges from 310 to 667. The PBT test has 3 score conversion. This includes the listening section of 31 to 68. The structure section of 31 to 68, and reading section 31 to 67. The raw scores conversion is based on factors such as duration of the TOEFL exam, level of difficulty. The determination helps to release a more accurate scorecard. All the universities and organizations looking at the TOEFL score consider internet-based exam as well as the paper-based exam.

For a University aiming 100% in the internet-based exam (iBT TOEFL exam) requires 600 in the PBT TOEFL exam. Universities and organizations claim above a hundred percent for the internet-based exam (iBT TOEFL exam). So a minimum of 100 and above out of 120 will fetch to the top organizations, colleges, and universities.

Defining Each Section Parameter (Reading Section TOEFL Exam)

The passages under this section are usually 700 words long. A certain topic with comparative discussion is usually part of the assessment. The question set consists of historical, scientific, and even philosophical passages. Each passage makes about 12 to 14 questions. Questions can be in the form of a false statement or identification of an argument, for instance.

5 eggs, separated

80 ml of milk

1 can evaporated milk

Method to prepare the Tres Leches Cake:

Begin by preparing the cake batter.

Preheat the oven to 180 C and grease an 8-inch cake tin with butter.

In a large bowl, cream the egg yolks with ¾ cup sugar till you get ribbon consistency. This should take around 5 minutes. In the end, the yolks should be pale yellow. Very gently, without deflating the mixture, add in the milk, vanilla, flour, and baking powder.

In another clean stainless steel bowl, beat the egg whites with the remaining sugar, adding in the sugar in parts till you get a shiny and smooth meringue. We are looking at firm egg whites, but not dry ones.

Now, fold this egg white mixture into the yolks and flour mixtures using a spatula.
