 250-300 Gms Rohu Fish (Cut Into Pieces)

 Turmeric Powder

 Salt To Taste

 Mustard Oil

 Fenugreek Seeds/Methi Seeds

 Mustard Seed ( Optional)

 Tomatoes(Cut Into Slices)

 Chilly Powder (Optional)

 Onions(Slices)(Optional)

 Hot Or Warm Water

 Green Chilly Slits

 Few Chopped Coriander Leaves 

 Lemon (To Extract Juice)

Recipe-

 1. Take some washed fish pieces in a bowl. Marinate the pieces with salt and turmeric and then keep it aside for 5-10 minutes

2. Heat the mustard oil in a kadhai(wok). Shallow fry the fish pieces to a golden brown and then keep them out and set aside. There is a note here do not over fry the fish pieces. 

3. Heat mustard oil in a kadhai(wok). You can even use the same oil which is used to frying the fish. Add fenugreek seeds to hot oil. Allow it to splutter.

3. Saute the chopped onions(optional) and green chillies until soft. Add in the chopped tomatoes and stir fry for 5-8 minutes. 

4. As the tomatoes go soft, add salt as required and a pinch of turmeric. However, you can also add chopped ginger and garlic to it if you want. And mix it well and cook until the tomatoes are done.

5. Add about 2 cups of water and cover the wok with a lid. Let everything cook together and form an aromatic broth.

6. Cook until the mixture is cooked through and to your desired consistency. And add the fish pieces into the gravy and give it a proper stir. Then cover the wok with the lid and let it cook on simmer. 

7. As the gravy comes to a final boil, add some lemon juice to it to get that extra tinge. You can also add coriander to it to get some extra rich flavour.

2. Thekera dia Maasor Tenga (Fish with Garcinia Mangostana)

Recipe- 

1. Soak the thekera in ½ cup of warm water for 10-15 minutes.

2. Mash the boiled potatoes.

3. Marinate the fish pieces with turmeric powder and salt and keep it aside.

4. Heat the oil in a kadhai(wok). And when the oil smokes, add the fenugreek seeds to it. Allow it to splutter.

5. When the fenugreek seeds turn black to raise the heat and fry the fish pieces lightly and keep them aside similarly.

6. Then lower the heat again and add the thekera with the water to it.

7. Add ½ tsp of turmeric powder to it and allow it to boil.

8. Then add another cup of warm water and the mashed potato and bring it to boil again.

9. Add the fish pieces and continue to simmer for 4-5 minutes.

10. However you can add ¼ tsp of sugar, if desired.

11. After that, season the curry with coriander leaves.

12. And finally serve with steamed rice and green chillies.

3. Sorioh dia maasor jool ( Fish in mustard gravy style)

Ingredients-

4 tsp mustard seeds or 2 tsp Indian mustard powder 

1 lb/ 500 gm fish fillets – preferably white fish Tilapia pomfret, haddock, cod loins

turmeric powder

salt to taste

green chillies split

mustard oil

finely chopped onion

half-inch cube ginger peeled and chopped fine

finely chopped medium-sized tomato

1 cup of water

finely chopped fresh coriander

Recipe

1. Prepare a mustard paste by soaking mustard seeds in a small bowl with enough water and cover it completely for 2 hours. 

2. Continue to drain water and grind it into a paste in a blender adding water as necessary. Until a fine, foamy and very thin liquid paste is obtained.

3. Prepare the fish by cutting them into the desired size. Coat them with the turmeric and salt. And then leave it aside at room temperature. Shallow fry the fish pieces to a golden brown. Remove the fish and keep aside. 

4. Continue in the same skillet to sauté the onions until soft. Let it cool for a few minutes. And then grind the ginger, tomato and the sauteed onions. 

5. Tip it back into the skillet and add a cup of water and the green chillies. Cook it until a desired consistent mixture is reached.

6. Place the fish in. Slowly pour the mustard paste. However you can use a strainer if it’s not smooth. Simmer for a few minutes.

7. Taste for salt and add the coriander leaves if desired. Squeeze the juice of half a fresh lemon. And finally serve it hot with boiled white rice.

  6. Mix properly so that all the ingredients combine with each other. If you find any lump in the mixture, then add little milk to it.
  7. Grease baking tin with oil and preheat in microwave oven. Select Convection mode and set temperature to 170 degrees Celsius. Preheat baking tin for 1 minute.
  8. Then remove baking tin and pour the cake mixture in it. Keep it in microwave oven over a grill and bake it for 30 minutes.
  9. Then remove cake and let it cool down. Invert the baking tin on a plate to get the whole cake and then serve it.

  1. Bread – 8 slices
  2. Potato – 4
  3. Salt – According to taste
  4. Capsicum – 1
  5. Onion – Half
  6. Chili – 1
  7. Ginger – small piece
  8. Turmeric powder – Half teaspoon
  9. Chili powder – Half teaspoon
  10. Garam masala – Half teaspoon
  11. Chaat masala – Half teaspoon
  12. Maida (Refined flour) – 1 tablespoon
  13. Pepper powder – Half teaspoon
  14. Lemon juice – 1 tablespoon
  15. Coriander leaves – 1 tablespoon
  16. Oil – As needed for frying

Method –

  1. Crumble the bread slices into small pieces. The smaller the size of bread pieces the faster they combine in dough. Chop chili, ginger, onion and capsicum finely.
  2. Boil the potatoes in pressure cooker and peel them. Take a large mixing bowl and mash the potatoes. Mash very well so that there is no lump.
  3. Add bread, chili, ginger, onion and capsicum to that bowl. Then put salt, turmeric powder, chili powder, garam masala, chaat masala, pepper powder and maida to it.
  4. Mash very well so that all the ingredients get combined. Then add lemon juice and coriander leaves to it. Mash well and make sure that the dough is non sticky.
  5. From the dough, make round shaped cutlets and keep them aside. Heat a pan and put sufficient oil to it. Deep fry the cutlets in batches till they become crisp.
  6. Fry the cutlets till they turn brown. Serve them hot.

Garlic Cheese Toast

This is an appetizing dish of bread with garlic and cheese. You can eat this for breakfast or snacks.

  11. Chaat masala – Half teaspoon
  12. Maggi Masala e Magic – Half teaspoon
  13. Tomato sauce – 1 tablespoon
  14. Water – As needed
  15. Coriander leaves – 1 tablespoon

Method –

  1. Cut bread into small pieces. Chop chili, garlic, onion, tomato, carrot, capsicum and cabbage finely.
  2. Heat a pan and put oil to it. Add onion, garlic, chili and fry well till the raw smell disappears. Then put tomato to it. Saute well for some time.
  3. Add carrot, capsicum and cabbage to it and fry well. Then put salt, chaat masala and Maggi Masala e Magic to it. Mix very well.
  4. Add tomato sauce and mix properly. Put little water so that all the ingredients combine with each other. Cover the pan and simmer for few minutes.
  5. Remove cover and put bread to the pan. Mix gently so that the bread pieces do not break. But ensure that the bread pieces get coated with masala.
  6. Mix well and garnish with coriander leaves. Serve it hot.

  1. Bread – 10 slices
  2. Sugar – Half cup
  3. Ghee – 3 tablespoons
  4. Milk – 3 cups
  5. Cardamom (Elaichi) – Few pods

Method –

  1. You can use any dry fruits of your choice. I used almonds, cashews and raisins for this. I chopped almonds and cashews and fried all dry fruits in ghee.
  2. In Cardamom, remove the husk and crush the seeds in mortar and pestle. The powder should be fine.
  3. Cut bread into small pieces and keep them aside. You may use powdered sugar but whole sugar will also dissolve in the dessert.
  4. Heat a pan and put ghee to it. Then add bread pieces to it. Roast till they become brown and crisp. Put milk to it and soak bread pieces in that.
  5. Stir continuously and mash bread pieces. Make sure that bread has absorbed milk. Add sugar to it and mix vigorously.
  6. When it gets cooked, add Cardamom powder and dry fruits. Serve it hot or cold according to taste preference.

Bread Pudding

This is a delectable dessert made from bread with the flavor of custard. It is healthy and very soft.

  2. Milk – 2 cups
  3. Sugar – One-Fourth cup

  2. In a large mixing bowl, put milk, sugar and custard powder. Mix them very well so that there is no lump.
  3. Heat a pan and transfer this milk mixture to it. Stir continuously till milk thickens. Then add bread crumbs to it and mix very well.
  4. Keep stirring till the mixture becomes creamy. Then switch off the gas and pour this mixture to the bowl which will be kept in steamer.
  5. Keep the bowl in steamer for twenty minutes. Then cool it completely and keep in refrigerator for at least 1 hour. Unmould the pudding and serve it.
