And the best part about Indian cuisine is that it is always backed up with so much history and cultural influences. In fact, did you know that our signature dish, Chicken Tikka Masala, is an absolute hit in the global world out there?

Summing up Indian cuisine in a few words is however a task in itself. Because of the cultural and regional diversity in the country, the food that you would find in the country is also really diverse. In fact, famous dishes such as pita break, gyros and tzatziki are all a part of the Greek cuisine. Greek cuisine is also really flavourful. It uses a lot of strong flavors such as honey, oregano, mint, garlic, thyme, and oregano for its seasonings.

Lebanese cuisine

Lebanese cuisine uses a lot of starches, fruits, vegetables, fish and seafood, and also whole grain. Animal fats, on the other hand, are consumed only sparingly. Lebanese cuisine also has an inclination for poultry over red meat, though red meat is eaten in the form of lamb and goat meat on the coastal areas and mountainous regions respectively. There food also includes a lot of garlic and olive oil, and relies on lemon juice, herbs, lemon and lemon juice for flavourings.

A lot of food that we consume on a daily basis comes from the Arab cuisine. Think of foods like shish kebabs, hummus and falafel, and also couscous and baklava. Did you know that all of these are a part for the Arab cuisine? Salad is often served as a side dish with this food. Spices such as cinnamon, saffron and cumin are an integral part of this cuisine. Dates, garlic, rice and yogurt are also heavily used.

The classic English breakfast is a much sought after meal all across the globe. Over the years, it has become a signature way to start the day for many. It includes some standard foods like scrambled eggs, sausages, hash browns, white beans and bacon, often also tomatoes on the side. Foods like fish and chips, stews and pies are often association with English cuisine. In fact, a lot of desserts that are considered to be French also have English origins. These include foods like the Borsch soup, which is made of beets and tomatoes. Other staple foods in this cuisine include boiled or baked meat. Russian meals are often served with vodka.

Portuguese cuisine also uses a lot of vegetables, such as tomatoes, bell peppers, onions and cuisines. As a result, this food is vibrant and colourful to look at, and is also packed with vital vitamins and minerals. Additionally, it includes starchy dishes, such as feijoada, which is basically a rich black bean stew made with beef and pork, and açorda, which is a Portuguese bread soup. You will also find the Portuguese using a lot of potato and rice in their food items.

Filipino cuisine

Filipino cuisine comprises of the cuisines of more than a hundred different ethnic and linguistic groups. It is thus quite varied and multi-faceted. Their food ranges from something as simple as fried salted fish and rice to complex dishes like paellas and cozidos. Another traditional feature of their cuisine is ‘counterpoint’; which is basically combing something sweet with something salty to create surprisingly pleasing combinations. In fact, a lot of this food is representative of the East meets West culture.

Of course, there are so many more cuisines out there for one to try and explore; and it is no doubt that each of this cuisine is unique and powerful in its own way.

What is more interesting is the fact that all of these foods have so much vibrant history attached to them. This is precisely what adds another altogether complex layer to the food that we consume. Most cuisines are independent, while many borrow heavily from others, while many continue to influence and inspire others! And that is where the real beauty of food lies.

Ten Recipes to Dine on this Quarantine Season

Quarantine, Quarantine, Quarantine. I’m sure you’re absolutely fed up by now. The same walls, the same scenery, again and again, is bound to make anyone claustrophobic after a while. Today marks two weeks into the Quarantine, and we know that a lot of you have already burnt through all the TV series and movies you could watch. So, we would like to propose a change in plans. Why don’t you spend this extra time cooking food for yet another day in front of the sofa?

And what’s more, you could even figure out what you’d like to watch while the food’s cooking. (PS: Season Four of La Casa De Papel a.k.a Money Heist is finally out on Netflix!)

Do not worry. There’s no need to be a trained professional to cook these recipes. You also do not need to have a hoard of ingredients. You need only three readily available things for each of them, and salt and pepper. Also, maybe just a video call or ask your mother how to preheat an oven? Let’s begin.

What Do I Drink?

Every Meal should begin with the quintessential drink. And yeah, well if you have been to any restaurant in India, your natural response would be to make a lime soda, sit back and relax. But because this is Quarantine, and there are no rules, here are some fusions that we think you’d like.

1. Dalgona Coffee.

Suffice to say, we have also bought into this decoction that started as a mere Tik Tok video.

The ingredients you shall need are –
1. Two tablespoons of Instant coffee.
2. Two –Three tablespoons of sugar.
3. Water and Milk.

First, put the coffee and sugar into a bowl and pour a few drops of water into it. Now you could either mix it with hands, to around 400 times, stirring fast that is, or you could just use a hand-held mixer if you have one. The frothy mixture obtained is dalgona coffee. Place the coffee on a glass half-filled with milk. We have ourselves the final product. While drinking, mix these two decoctions. You shall obtain a caffeine-filled frothy delight.

2. Raspberry Tequila.

It’s Quarantine time, and there are no rules! You could prepare this next recipe even for breakfast, as a side to a fluffy omelette (more on that later.)

The ingredients you shall need are –
1. A tablespoon of raspberry jam (measurements are subjective to servings.)
2. An ounce of lemon juice.
3. An ounce of tequila.
4. A medium-sized ice-cube.

Well, there’s honestly not much to this. Pour in the raspberry jam, lemon juice and tequila into a shaker and gently swirl it. Then place a medium-sized ice cube, close the shaker and shake vigorously. Place a sieve before filtering out the tequila into a margarita glass (or any glass you prefer) You could increase the serving size based on your preference. Just maybe go a little light on the tequila.

3. Whiskey Peach.

If raspberry isn’t really up to your tastes, or if you simply don’t have some, we have another recipe to fix you up. Peach is milder and won’t dominate your drink as much as the raspberry does. We would ideally recommend jam as the mixer, but you are free to use an alternate juice too.

The ingredients you shall need are –
1. A tablespoon Peach jam (or juice, whichever you have lying around)
2. An ounce of lemon juice.
3. An ounce of whiskey.
4. A medium-sized ice-cube.

You know the drill. Pour in the jam or liquid, the lemon juice, the whiskey and swirl. Then put in the ice, close the shaker and shake vigorously. Filter out the drink into the glass of your juice. This drink is also subjective to servings, and you can change the measurements accordingly.

Now that we have conquered the basics let’s move on to the next –

What Do I Eat?

Since it’s just you and your soft toys and the TV at home right now, we have some healthy and unhealthy recipes you could whip up in no time. And just as a bonus, we have a side to it too! So prepare to dine like a king today.

1. The Fluffiest Omelet you know.

Have you ever seen those types of omelettes on Instagram that look like clouds and probably taste like them too? Well, fret not because they are super easy to prepare.

The ingredients you shall need are –
1. An Egg (or two).
2. Butter.
3. Salt.

Break two eggs into a deep bowl. Beware of any stray eggshells that have made way into it. Now put some spice in your eggs, just the way you like it. Take a hand mixer and start beating the eggs. Soon, it shall begin to look like a smoothie. Do not stop there. Go on, till your eggs look like whipped cream, and create soft peaks. Now remove the mixer, and place a pan on heat. Melt some butter on there and then slowly pour the fluffy egg batter onto it. Place a lid on it after a minute or two and let it cook. Instead of flipping it over, slide the omelette the same way into a plate and fold it. There you have it, folks! The Fluffiest Omelet, you know.

2. Mac and Cheese.

I could call this grossly unhealthy, but I’m sure everything is game right now. This comfort food could probably help with the aching loneliness you feel. I apologise, I am merely pulling your leg. Let’s just dive right into it now.

The ingredients you shall need are –
1. Elbow pasta (or whichever pasta is in your cupboards.)
2. Enough milk to boil your pasta in.
3. A lot of cheddar cheese.

Pour the milk into your container. As the milk comes to a boil, pour your elbow pasta in too. Let it boil, till you see the pasta expand and become moist. Now you can simply pour in the cheddar cheese and mix. Keep it on a low flame while doing this. Do not stop mixing until the cheese has melted into the pasta. Your mac and cheese are ready!

It could be broccoli or cauliflower, depending on how you like it. While there are different ways to cook both of them, we can agree that they are both simple enough to be made in a jiffy.

The ingredients you shall need are –
1. Broccoli – or Cauliflower, whichever you prefer.
2. A pod of crushed garlic.
3. A lot of cheese – of whichever type you prefer.

If you are using broccoli, simply put it in a baking tray. If you a using a cauliflower, simply place some butter in a pan and sauté the cauliflower with a pinch of salt. Now put the cauliflower in a baking tray. Fry some garlic in butter and pour it onto the entirety of the broccoli. Healthily sprinkle the cheese on top to cover it all and place it into an oven. Bake it at 375 F for 25 minutes. You have your Cheesy Garlic broccoli, aside to complement all your dishes.

And last but not least, is what do you have when you’re craving for some epic dessert. So we move on to our next –

The simplest, most easy dessert you could make at home is a mug cake. It’s cheap, needs three ingredients, and you can eat it out of a mug! How cool is that!

For this recipe, the ingredients you shall need are –
1. ¾ cup of chocolate-hazelnut spread (basically, Nutella)
2. 2 Eggs
3. ¼ cup of Flour.

Pour the chocolate spread and the eggs into a bowl. Or if you intend to do it entirely in a mug, you could do that too. Mix them well, until it has become one paste. Pour in the Flour and mix in circular motions along one direction till it looks like thick cake batter. Microwave it for 2 mins. Make sure to check if it has been cooked fully by sticking a toothpick in. Microwave for another three minutes if needed. And there you have the best dessert ever, the chocolate mug cake!

On 24th March 2020, Prime Minister Narendra Modi declared that the entire nation will be under a total lockdown for 21 days to reduce community spreading of corona-virus disease in India and all the havoc began. All started panicking and feared for their own lives and their loved ones. The WhatsApp University began bombarding numerous solutions for prevention and cure of the horrifying disease COVID-19. But the best precaution worldwide is to yourself locked-down in the world’s best place:” your home, sweet home”.

The PM’s order was a bold step but a large number of people were away from their comfortable homes. This lockdown has put everyone into a confused state of mind. Would you call it a house arrest or a chance to evaluate yourself? To answer this we need to look into the lives of different individuals. From rich to poor, from the people dwelling in skyscrapers to the ones in the heart of the country the villages.  

For instance, many of my IT professional friends like Vipul Vaity this lockdown means work from home and it means at times he has to slog a few more hours than he does in his office. But he’s happy to do so as he saves his time on travelling and also keeps the pollution level low in the city. This ritual of slogging many more hours is followed by all the professionals which results in more productivity for their respective companies. As long as the internet works the work from home crowd doesn’t complain.

On the other hand Aysh a Sales Manager, with a real estate Company, this lockdown is an opportunity for him to spend time with his wife. As his job profile involves lots of travelling, flying abroad and dealing with business professionals from the Middle East regularly. For Ankit Bhoi who works as the Head of administration at a School, vacations have come early but at the same time, he’s worried when the new academic year will begin.

Dr. Akanksha has been juggling with work and home. She’s attending patients at late hours and also looking after her sister-in-law who’s expecting a baby soon. For her, this lockdown is a mixture of sentiments where she’s helping the recovery of patients and on the other hand preparing for a newcomer in her life.

Khozaim Momin Sales manager with a company dealing into manufacturing of medical equipment. He’s content as he has contributed to society by crossing his monthly sales target. He has supplied the medical equipment to many hospitals in Mumbai which are in dire need for treating the COVID patients. And during the lockdown, he’s feeling relieved as he has found ample time to help his wife and look after their newborn baby.

Dreams awakened and prolonged

Krunal Patel a Software Engineer’s dream was fulfilled on Valentines when he got approval from his company to work at the US office for a period of 2 years. He was busy planning his scheduled leave in May when the COVID 19 outbreak moved rapidly and his dream again seems to be postponed for the time being. Ujwala a practicing Lawyer has found solace at her native place in Wai, Satara. Her native home is a renovated farmhouse which is away from the busy city life. So she’s happy to teach her young daughter, the importance of agriculture and village life.

Subhradeep Banerjee an entrepreneur is enlightening himself by watching the online book reviews and happily sharing the secrets of how to improve your work and lead a better lifestyle. Kasim stays in a chawl beside his relative Shahid both hailing from their native villages in the outskirts of Gulbarga, Karnataka. Kasim delivers newspapers and Shahid a chaiwala feeds his family by preparing tea for a warehouse complex. He approximately served 500 tea-cups daily and had planned to go to his native place in Gulbarga, Karnataka for the summer vacations along with his family and his friend Kasim but due to lockdown, they both are living on the savings they made in the past few months and hence it seems summer vacations have been postponed for both until next year.

This lockdown has also allowed social worker and youth politician to help the peoplein which my friend Hemraj Mhatre along with his team of 20 youths from Panvel and Raigad District have helped around 600 labours to get shelter, essential supplies like food and medicines from different states like Uttar Pradesh and Bihar. His mentor Shri. Satyajeet Tambe, President of Maharashtra Pradesh Youth Congress (MPYC) and his youth workers around the entire state of Maharashtra have done a humongous task.

Around 40 District Presidents and numerous post holders of (MPYC is a youth wing of Indian Youth Congress and Indian National Congress) have conducted Blood Donation Camps around the entire state and have successfully collected about 10,000 bottles of Blood and helped the Indian Government in these testing times.

The youth feel proud as apart from blood donation camps they have also committed to help the displaced and the poor people by providing them face masks, sanitizers, and have tried to donate essential supplies for the entire lockdown. Tambe’s youth team of Washim District have painted the streets in various villages and have conveyed the message of maintaining the social distance to prevent the dreadful COVID-19 whereas his Thane team has undertaken the sanitation work in the Yeor village, Thane. Uddhav Thakeray, the Chief Minister of Maharashtra praising the efforts he had put to feed 6,000 families and also managed to collect 2 tonnes of rice to feed another 60,000 poor people. All this was done single-handedly without any help from the government. He explained to the CM how he had set up 21″seva-kitchens” in India to feed the needy with nutritious food and also “Neki ka Pitara aka fridge of kindness” for the poor.

Since the outbreak of Covid-19, there have been many donations done by various business personalities, celebrities and sportsmen in the entire nation. The Tatas have always set an example during the time of crisis, Shri. Ratan and his group of companies have pledged to donate Rs. 1500 crore to help the needy during the fight against this dreadful disease.

A 15 year golfer Arjun Bhatia has made one of the greatest sacrifice a sportsman can make. This teenage golfer from Noida has sold all his trophies which he earned in his career and raised Rs. 4.30 lakhs towards the donation for the needy. The trophies includes three world golf championship titles and national championship and donated the money towards PM-CARES (Prime Minister’s Citizen Assistance and Relief in Emergency Situations) Fund.

ASEXUAL

The last but not the least, we arrive at asexual. An asexual person experiences a difference in the degree of sexual attraction as compared to a sexual person. Now this shall not be misinterpreted as someone who is willingly asexual or celibate. There might be a little or even no sexual attraction in the case of an asexual person. “Ace” is the umbrella term for Asexuality. An ace can be of any gender and be attracted to anyone. This community suffers due to inappropriate visibility.

This brings us to sexual orientation and all the communities in themselves are an intrinsic part of a person’s identity. Comprehending the LGBTQIA community begins when we accept and broaden our mindsets to their existence. Apple pie later went on to become a staple in the American cuisine, and with the advent of advertising and news in the 20th century; the dish was transformed into a national symbol. It was also around this time that the phrase ‘as American as apple pie’ started to become popular.

Gradually, the apple pie also began to be associated with the US government, which only increased its popularity. This also greatly contributed to it being counted as an American symbol. Here is a full proof recipe of an apple pie, including a delicious apple pie filling for you to try. And if you are craving for a delicious apple crumble pie, simply freeze some of the apple pie dough. Once frozen and solid, break it in chunks and put it on top of the filling before baking.

Apple pie recipe:

  • Apple pie dough:

2 ½ cups maida

4 tsp. sugar

¼ tsp. salt

200 grams butter, cold and diced

1 large egg

  • Apple pie filling:

750 grams baking apples

2/3 cup caster sugar

¼ cup unsalted butter

2 tbsp lemon juice

¼ tsp cinnamon powder

¼ tsp nutmeg powder

Method:

  1. Start by making the dough. Combine all the dry ingredients together, add in the butter. Use your fingertips to break the butter into small pieces. Make sure that the butter coats all of the flour.
  2. When the mixture resembles breadcrumbs, add in the egg to combine the dough and bring it together. Do not over knead.
  3. Shape into a disc, cover in plastic wrap and freeze for an hour.
  4. Prepare the filling next. Core, peel and chop the apples. Mix them with the lemon juice and sugar and set aside.
  5. Melt the butter in a saucepan, and add the apple sugar mix to it. Cook till the sugar dissolves and the apples soften, for about 10 minutes.
  6.  Strain the mixture if it is too liquidy, or else you will end up with a really soggy filling. Add in the spices, and mix well.
  7. Take half of the chilled dough. Roll into an 11-12 inch wide disc. Repeat with the other half. Chill the dough for around 10 minutes.
  8. Line a 9 inch pie pan with the rolled out dough, and trim the excess dough. Put the apple pie filling in the centre
  9. Brush the sides with egg, and place the second disc of dough on the top.
  10. Pierce the dough disc on the top with a paring knife, to allow steam to escape.
  11. Freeze for around 20 minutes, and then bake at 200 degrees C for around 45 minutes to an hour, till nice and golden.
