We all like eating special rice dishes for lunch and dinner. There are some Pulao and Biryani dishes that we love to eat. What if you could make those rice dishes at home? They are all one pot meals and do not need too much time to prepare. We can prepare these rice recipes at home.
Rajma Pulao
This is a delicious dish made from Rajma, herbs, spices and rice. It is a substitute for Rajma Chawal which is made in one pot. You can eat Rajma Pulao with raita, curd, fry or curry.
Ingredients –
- Rajma (Kidney beans) – Half cup
- Basmati rice – 1 cup
- Water – 4 cups
- Salt – According to taste
- Bay leaf – 1 or 2
- Cinnamon – some pieces
- Cloves – Few
- Cardamom – Few
- Cumin seeds – 1 teaspoon
- Chilli – 1
- Ginger – 1 inch
- Garlic – Few cloves
- Onion – 1
- Oil – 3 tablespoons
- Lemon juice – 1 teaspoon
- Coriander leaves – 1 tablespoon
- Turmeric powder – Half teaspoon
- Chilli powder – Half teaspoon
- Coriander powder – Half teaspoon
Method –
- Soak Rajma on the previous night of cooking Rajma Pulao. Rinse the Rajma before soaking in water.
- On the next day, discard the water and rinse rajma again. In a pressure cooker, put Rajma and add 2 cups of water.
- Pressure cook till the Rajma becomes soft. The number of whistles depends on the quality of Rajma. Some Rajma gets cooked fast, while some take time.
- Separate Rajma from the water and keep it aside. Rinse the Basmati rice finely with water. Then soak the rice in water for half an hour.
- Chop the chilli, ginger, garlic and onion finely.
- Heat a pressure cooker and add oil, cumin seeds, bay leaf, cinnamon, cardamom and cloves. Let them crackle.
- Then add chilli, ginger, garlic and onion. Fry till the raw smell disappears.
- Put Rajma to it. Then add salt, turmeric powder, chilli powder and coriander powder. Mix very well.
- Add basmati rice, 2 cups water, coriander leaves and lemon juice to it. Stir it well. Cover and pressure cook the pulao on a medium to high flame for 1 or 2 whistles.
- Open the lid when the pressure comes down. Serve it hot.

Shahi Biryani
This is an appetizing rice dish. It is made from rice, vegetables, herbs and spices. You can eat Shahi Biryani with raita, curd, fry or curry.
Ingredients –
- Basmati rice – 2 cups
- Water – 4 cups
- Salt – According to taste
- Everest Shahi Biryani masala – 1 small packet
- Vegetables – 2 cups
- Oil – 3 tablespoons
- Curd – 1 cup
- Bay leaf – 1 or 2
- Cinnamon – some pieces
- Cloves – Few
- Cardamom – Few
- Cumin seeds – 1 teaspoon
- Chilli – 1
- Ginger – 1 inch
- Garlic – Few cloves
- Onion – 1
- Coriander leaves – 1 tablespoon
- Peppercorn – Few
- Tomato – 1
Method –
- You can put any vegetables of your choice. I had put carrot, beans and cabbage. Chop the vegetables finely.
- I had used the entire Rs. 10 packet of Everest Shahi Biryani masala. You can use any Biryani masala that you want.
- Rinse the Basmati rice finely with water. Then soak the rice in water for half an hour.
- Mix the masala powder with curd and keep it aside. Chop the tomato, chilli, ginger, garlic and onion finely.
- Heat a pressure cooker and add oil, cumin seeds, bay leaf, cinnamon, peppercorn, cardamom and cloves. Let them crackle.
- Then add chilli, ginger, garlic and onion. Fry till the raw smell disappears. Add the chopped vegetables to it. Fry well but do not overcook.
- Put tomato and sauté till it turns mushy. Add the mixture of masala powder and curd. Mix well and ensure that curd does not burn.
- Add rice, salt, water and coriander leaves to it. Stir very well. Cover and pressure cook the biryani on a medium to high flame for 1 or 2 whistles.
- Open the lid when the pressure comes down. Serve it hot.

Masala Rice
This rice dish is a healthy combination of vegetables and rice. It is tasty and wholesome meal. You can eat Masala Rice with raita, curd, fry or curry.
Ingredients –
- Rice – 1 cup
- Oil – 2 tablespoons
- Salt – 1 teaspoon
- Peanuts – 2 tablespoons
- Lemon juice – 1 teaspoon
- Cumin seeds – Half teaspoon
- Mustard seeds – Half teaspoon
- Coriander leaves – 1 tablespoon
- Onion – 1 small
- Tomato – 1
- Asafoetida (Hing) – 1 pinch
- Turmeric powder – Half teaspoon
- Chilli powder – Half teaspoon
- Vegetables – 2 cups
- Chilli – 1
Method –
- You can use any vegetable of your choice. I had used carrot, beans, peas and cabbage. Chop the vegetables finely.
- Boil the rice and keep it aside. The steamed rice must not be too soft. Chop the chilli, onion and tomato.
- Heat a pan and put oil to it. Add cumin seeds, mustard seeds and Asafoetida. Let them splutter.
- Add peanuts and roast for few minutes. Then add chilli, onion and tomato. Put turmeric powder and chilli powder to it. Mix very well.
- Then add all the vegetables and put salt. Fry well but do not overcook. Sautee the vegetables for few minutes.
- Add cooked rice to this. Mix well and cook for some time. Then add lemon juice and coriander leaves to it.
- Mix them very well. Serve it hot.

Tomato Rice
This is a tasty rice dish which does not need too much time to prepare. It is made from rice, tomato and spices. You can eat Tomato Rice with raita, curd, fry or curry.
Ingredients –
- Tomato – 2 or 3 depending on size
- Rice – 1 cup
- Oil – 2 tablespoons
- Mustard seeds – 1 teaspoon
- Cumin seeds – 1 teaspoon
- Garam masala – Half teaspoon
- Cinnamon – Few pieces
- Peanuts – 1 tablespoon
- Curry leaves – Few
- Onion – 1
- Chilli powder – 1 teaspoon
- Salt – 1 teaspoon
- Chilli – 1
- Coriander leaves – 1 tablespoon
Method –
- Select ripe tomatoes with a lot of juice. That will give good flavour to the rice.
- Chop the tomatoes, onion and chilli. Boil the rice and keep it aside. The steamed rice must not be too soft.
- Heat a pan and put oil to it. Add mustard seeds, cumin seeds and cinnamon to it.
- Add peanuts, chilli, curry leaves and onion to it. Then add tomatoes and sauté till it turns mushy.
- Put salt and red chilli powder to it. Mix very well. Then add garam masala to it.
- Add cooked rice to this. Mix well and cook for some time. Make sure that masala coats rice.
- Add coriander leaves to it and mix. Serve it hot.
Chhole Pulao
The recipe of Chhole Pulao is same as that of Rajma Pulao. But the difference is in the main ingredient. You have to use Chhole or Chickpeas for this dish instead of Rajma. The other 18 ingredients remain same. You have to follow the same method for preparing Chhole Pulao. It is a delicious dish that is made from rice, chickpeas, herbs and spices. You can eat Chhole Pulao with raita, curd, fry or curry.
Channa Pulao
The recipe of Channa Pulao is same as that of Rajma Pulao. But the difference is in the main ingredient. You have to use Channa or small black Chickpeas for this dish instead of Rajma. The other 18 ingredients remain same. You have to follow the same method for preparing Channa Pulao. It is a delicious dish that is made from rice, small black chickpeas, herbs and spices.
