How to make delicious Veg dishes at home

Veg refers to a combination of vegetables instead of a particular vegetable. The combination of vegetables is according to the cuisine of the dish and availability of vegetables. There are some famous Veg dishes which we like eating in restaurants. What if you could cook those delicious dishes at home? You can enjoy eating restaurant style Veg dishes whenever you want without depending on other sources. The recipes of some Veg dishes need ingredients which are easily available at home.

Veg Crispy

It is a lip-smacking Chinese dish of vegetables which makes a good starter. This is a famous Chinese side dish. You can eat this with any rice dish or noodles dish.

Ingredients –

  1. Capsicum – 1 or 2 depending on size
  2. Cauliflower – Half
  3. Carrot – 1
  4. Beetroot – 1
  5. Maida (Refined Flour or Plain Flour) – Half cup
  6. Cornflour – Half cup
  7. Salt – According to taste
  8. Pepper powder – 1 teaspoon
  9. Garlic – Some cloves
  10. Ginger – A piece
  11. Water – As needed for blanching cauliflower and for making batter
  12. Oil – As needed for frying and for making gravy
  13. Chili – 1 or 2
  14. Tomato Sauce – 2 tablespoons
  15. Onion – 1
  16. Maggi Magic cube – 2

Method –

  1. You can use baby corn and mushroom also for this dish. Cut capsicum, cauliflower, carrot and beetroot. Chop garlic, ginger, onion and chili finely.
  2. Heat a vessel and put water in it. The water should be sufficient for blanching cauliflower florets. After the water boils, put all cauliflower florets and salt in it.
  3. Cover it for some time. Then remove cover and drain off the water. Keep the cauliflower florets aside. In a large mixing bowl put Cornflour, Maida and salt.
  4. Mix all the ingredients and add water in required amount. Check the consistency of batter. Put all vegetables in the batter. Batter should coat all these vegetables.
  5. Heat a pan and put sufficient oil to it. Add the vegetables in batches and fry them. You can fry one vegetable at a time and then fry another vegetable.
  6. Fry till they become crisp. Keep them aside. In the same pan, heat oil and put onion to it. Then add garlic, chili, ginger and fry till the raw smell disappears.
  7. Put salt and pepper powder to it. Fry till they get cooked. Add tomato sauce to it and mix well.
  8. If there is any batter left in the bowl, then add water and Maggi Magic cubes to it and mix.
  9. If there is no batter left, then mix 1 teaspoon of cornflour and Maggi Magic cubes with some water. Add this to the pan where other ingredients have been sauteed.
  10. Mix thoroughly so that a gravy form. Cook till the gravy turns glossy. Put the fried vegetables to this gravy. Mix well so that vegetables get coated with gravy.
  11. Cook for few minutes so that gravy gets absorbed in the vegetables. Saute till the dish turns dry. Serve it hot.

Veg Pulao

It is a tasty dish of rice cooked with vegetables, herbs and spices. This is a famous rice dish. You can eat this with any raita, salad, dal, curry or fry.

Ingredients –

  1. Basmati Rice – 2 cups
  2. Water – 4 cups and whatever is needed for soaking rice
  3. Vegetables – 2 cups
  4. Oil – 4 tablespoons
  5. Salt – According to taste
  6. Onion – 1
  7. Tomato – 1
  8. Garlic – Few cloves
  9. Ginger – A piece
  10. Chili – 1 or 2
  11. Coriander leaves – 2 tablespoons
  12. Lemon juice – 1 teaspoon
  13. Cumin seeds – 1 teaspoon
  14. Whole black pepper – Few
  15. Bay leaf – 1 or 2
  16. Cloves – Few
  17. Cardamom – Few
  18. Cinnamon – A stick
  19. Turmeric powder – Half teaspoon
  20. Chili powder – Half teaspoon

Method –

  1. You can use any vegetables of your choice and according to availability. I had used carrot, beans and cabbage.
  2. You can also use potato, cauliflower, peas, mushroom, baby corn and beetroot. Chop the vegetables finely. Rinse and soak Basmati rice in water for some time.
  3. Then discard water and keep the rice aside. Chop tomato, onion, chili, ginger and garlic finely. Heat a pressure cooker and put oil in it.
  4. Add cumin seeds, whole black pepper, bay leaf, cloves, cardamom and cinnamon. Let them splutter. Put chili, ginger, garlic and onion to it.
  5. Fry well till the raw smell disappears. Add tomato and saute till it turns mushy. Put vegetables and saute for some time.
  6. Add salt, turmeric powder, chili powder and mix properly. Put rice and saute for a minute. Add lemon water and water to it.
  7. Mix well so that all the ingredients combine with each other. Cover the pressure cooker and pressure cook for 1 whistle.
  8. Remove cover and check whether it has cooked or not. Serve it hot.

Veg Noodles

It is a delectable dish of noodles sauteed with vegetables. This is a famous snack. You can eat this with any sauce, ketchup or Chinese dish.

Ingredients –

  1. Noodles – 2 packets of 100 grams
  2. Water – As needed for boiling noodles
  3. Oil – As needed for boiling and frying noodles
  4. Salt – According to taste
  5. Garlic – Some cloves
  6. Onion – 1
  7. Capsicum – 1
  8. Carrot – 1
  9. Cabbage – Half
  10. Pepper powder – 1 teaspoon
  11. Tomato Sauce – 1 tablespoon
  12. Chili Sauce – 1 tablespoon
  13. Soya Sauce – 1 tablespoon
  14. Paneer – 100 grams

Method –

  1. It is not necessary to use Paneer in this dish. Paneer enhances the taste of Veg Noodles, so I used it. I had cut Paneer into small pieces. Chop onion and garlic finely.
  2. Cut carrot and capsicum in strips. Finely shred cabbage. Heat a large pan and boil water in it. The water should be sufficient for boiling all the noodles.
  3. Then add little oil and salt to boiling water. Put noodles to it and stir continuously. After it gets cooked completely, drain off the water.
  4. Rinse the noodles with cold water and keep it aside. Heat a pan and put oil to it. The oil should be sufficient for frying all the ingredients. Put onion and garlic to it.
  5. Fry till the raw smell disappears. Then add carrot, capsicum and cabbage. Saute for some time. The vegetables must get cooked yet remain crunchy.
  6. Then add salt and pepper powder to it. Mix very well. Add chili sauce, tomato sauce, soya sauce and mix properly.
  7. If you feel that the ingredients are sticking to the pan, then put little water. Make sure that all the ingredients have combined well. Then add boiled noodles to it.
  8. Mix properly so that all noodles get coated with the sauces. Then add Paneer pieces and mix well. Cook till noodles mix with other ingredients. Serve it hot.
